Quiche for “Dummies”

Sunday’s are my days to plan for the week. This is a favorite recipe of mine because it is extremely easy to make and tastes like you slaved in the kitchen.

Quiche for “Dummies”

4 servings


Cooking spray

1 cup fresh spinach, packed tightly (optional- frozen spinach, defrost)

7-8 eggs

½ cup feta cheese

½ cup shredded cheddar cheese

½ tsp salt

½ tsp pepper


1. Preheat oven to 375 degrees and coat pan with cooking spray

2. In a medium mixing bowl, combine eggs, cheese, salt and pepper. Mix until yolks are all broken.

3. Add spinach and stir to combine.

4. Pour mixture into pan.

5. Bake for 45 minutes.

Tip: eat with whole grain bread and some fruit and you have a great breakfast or lunch option!
