Hearty Banana Oat Cookies

My husband and I often struggle with knowing what to snack on in the afternoons. We always have yogurt, crackers, cheese, fruit and vegetables in the house but our problem is that we get bored with eating the same things every day. A good friend of mine told me about these snack cookies that her family enjoys, with no added sugars like a classic cookie. I did not believe you could make a good tasting cookie, without sugar, I had to try this recipe! A cookie with a cup of coffee as an afternoon snack seemed too good to be true! Well…these may just be the perfect afternoon cookie and I do not say that lightly! They are a cookie, but one that you can feel great about. Athletes, you want a quick pre-workout or to add a bit more protein to these cookies- eat with a glass of milk! I am going to be bringing a big batch of these with us on our ski trip as a great post-ski, pre-hot tub snack. Now the struggle is keeping up with the demand for these cookies (not a bad thing!).

Hearty Banana Oat Cookies

Ingredients:

·         2 cups rolled oats or quick oats

·         3 bananas, mashed

·         ¼ cup milk

·         1 egg

·         1/3 cup applesauce

·         1 tsp vanilla

·         1 tsp cinnamon

·         ¼ cup coconut

·         ½ cup chocolate chips

·         ¼ cup pumpkin seeds

·         ¼ cup slivered almonds

·         2 tbsp chia seeds

Directions:

1.      Preheat oven to 350F.

2.      Mix all ingredients in a large bowl until combined.

3.      Using a large ice-cream scoop, scoop heaping tablespoons on a parchment lined or sprayed pan. Press down gently with a fork.

4.      Bake for 15-18 minutes or until browned.

5.      Allow to cool completely. The cookies may seem soft, as if they are not cooked, but place in the refrigerator to cool and to allow cookies to firm up.
