Berry Yogurt Muffins

This is a recipe that has been requested more than once and I am excited to pass it on to you. I have tried many different recipes for muffins and some taste great, some are even as good as a cupcake but I found as soon as I tried to make my muffins healthy, they were way too dense. This is a recipe that is the best of both worlds (even got the husband approval). It is moist, fluffy and healthy. To make this muffin a perfect addition to your snack rotation, eat it with a glass of milk, or add some cheese. I hope you enjoy these as much as we do!


* 2 cups all-purpose flour (This can be swapped for an all-purpose gluten-free flour) 

* 1 cup white sugar (1 used 1/3 cup maple syrup but are much less sweet this way) 

* 1 teaspoon baking soda 

* 1 teaspoon baking powder 

* 1 cup Greek yogurt 

* 1 egg 

* 1 teaspoon vanilla extract 

* 4 tablespoons canola oil 

* 2 bananas, sliced 

* 1 cups blueberries 


1. Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups or line with paper muffin liners. 

2. Stir together flour, sugar, baking soda and baking powder. In a separate bowl, combine yogurt, egg, vanilla, oil, banana and blueberries. Stir mixtures together just until combined; batter will be very thick. Scoop into prepared muffin cups. 

3. Bake in preheated oven for 25 minutes. Recipe makes 12 muffins 


* Swap out the fruit for your favorite, I have used pears and apples and both worked well. 

* Add a tbsp of ground flax seed for some extra fiber 

* Add walnuts to increase your omega 3 intake
