Banana Protein Pancakes

It is important to start your day off right but many people struggle to get in a good quality breakfast because their mornings are rushed. I am a big fan of sleeping in as long as possible and these pancakes have been a life saver for me. They are loaded with protein, high in fiber and taste delicious. Make a big batch on Saturday or Sunday, freeze the extras; pop two in the toaster from the freezer, top with yogurt and fruit and you have a quick and easy weekday breakfast. Two of these pancakes contain around 20g protein and 7g fiber (amounts will vary depending on how large you make them). Try them for yourself, you will not regret it!


* 1 1/4 cup oats

* 3 large eggs

* 1 cup cottage cheese

* 1 banana

* 1 tsp vanilla extract

* 1 tsp cinnamon

* 2 tsp baking powder

* Optional: add blueberries or chopped apples for a fruity pancake


1. Combine oats, eggs, cottage cheese, banana and vanilla in a food processor. Process until completely smooth. Add baking powder and cinnamon, process for another second to mix in.

2. Heat skillet over medium heat and coat with cooking spray. Spoon batter in.

3. Cook until bottom of pancake is golden brown or you start to see bubbles forming on top of the pancake, then flip and cook the other side for a few minutes.

4. Repeat with remaining batter.

5. Serve with Greek yogurt, berries, fresh fruit and maple syrup
